These little heavenly Christmas Rum balls are a big hit in my household, so in the lead up to Christmas I thought I would share the recipe I use.
They are also a great gift idea for coworkers during the holidays.

Ingredients.

You will need:

 

250g Arrowroot Biscuits
395g Condensed Milk
1 cup Desiccated Coconut
1/4 cup Cocoa
1 1/2 tablespoons Rum (or essence of rum)
1 cup Desiccated Coconut (dressing)

Step 1

Place half of your arrowroot biscuits in a large bowl, I like to break them up as I place them in my bowl. Start crushing, I use my masher to crush the biscuits.

Now add the next half in and repeat that process until the biscuits are a fine mixture. The finer the mixture the better your rum ball will stay together.

If you own an electric process, like a nutribullet, this will cut the prep time down and give you a finer mixture. I kick it old school and use my potato masher. You can also place biscuits into a zip lock bag and crush with a meat clever if you prefer.

Step 2

Measure out 1 cup of your desiccated coconut and pour onto a plate or flat surface. The other cup of desiccated coconut will go into your mixture.

Measure and add all ingredients into your biscuit mixture. Remember if you will be serving the rum balls to children to use the essence of rum, so the flavour is still there but the alcohol is not.

Step 3

Stir your ingredients together using a wooden spoon. Make sure to mix thoroughly.

Once mixed wet your hands and gather a small portion of your mixture. Using both hands start rolling your portion until a smooth round ball forms, do not use too much pressure when rolling.

Place onto the plate of coconut and gently roll until fully covered.

Remove and place onto a tray or serving dish.

Repeat until there is no more mixture.

Step 4

Place in the fridge either overnight or for 2 hours to set before serving.

Once the rum balls have set, enjoy!
